How would someone go about ordering those two specific menu items? Both are to this diner's liking. Any details appreciated.

Two over easy? Or sunny side up?
Like most on here, I guess I prefer them Sunny on the Very Easy Side. The menu items of interest were the guerita and morocha....though I 'm sure the food is good too.
